Low-Carb Pizza with CHEESE/EGG base

100g approx cheddar cheese grated
100g approx mozzerella grated
3 eggs lightly beaten
1 t garlic powder
1 t basil or pizza herbs

Mix the cheeses, eggs, garlic powder and basil well. Line a 16-inch pizza pan with baking paper or spray. Evenly spread the cheese mixture in the pan, almost to the edge, making it as thin as possible. Bake at 200C 10-15 minutes until golden brown.

In the meantime, heat your toppings in a frypan (I use things like bacon, onion, mushroom, pepper, etc....) and grate some more cheese!
Once cooked, top your pizza base with a bit of tomato paste and your toppings then finish with cheese. Put back in the oven on GRILL and cook another 5 -10 minutes until cheese is melted!

Low-carb way of life

I've been low-carbing for about 3 months now and I LOVE IT! It stops me binging and putting on weight!
Anyway I thought I'd start collecting recipes for food I really miss. Kind of like an online recipe book. Some of these will not be my own recipes, just ones I've found and modified from others (thanks!!).

Shaking mad

Yesterday it took me hours to stop shaking.
I watched a father on his motorbike pick up his toddler daughter, pop her in front of him on the bike and they both sped off into the sunset helmetless.... Onto the main road, where accidents often happen.
I had no idea I was so effected by things like that. I've got my own little toddler and the fact he has to wear a belt or helmet whenever in a moving vehicle is just common sense to me.
I was so mad that I wanted to ask that man 'WHAT THE HELL ARE YOU THINKING' and was ready to do it when he drove on past me and disappeared again. Grrrrrrrrrrrr
I find it very hard to drop these things.

It's called a drivers licence

It's always holiday weekends that attract idiots to my small town. In fact I usually avoid leaving home in case I run into one of these 'people'.
Last weekend the unavoidable happened and we had to visit my parents. Then on the way home it happened... idiot #1 ran a stop sign, right in front of us (grrrr), and just to make our day idiot #2 ran the stop sign right after #1 nearly collecting our car (on my husband and toddler sons side). I was pissed!
We carefully navigated through our small town and into the country road (100km per hour) towards our house. Well, in the middle of the road idiot #3, the main offender of the day, stopped, blocking cars in all directions. No indication, no lights, no nothing. We watched him look over his passenger and check out his GPS... WHILE IN THE MIDDLE OF THE ROAD. After he had decided he was going in the right direction, he pulled in front of us and drove about 60km on our 100km road. Joy!
Idiot #3 slowed and sped for 5 minutes; often slowing down for no significant reason with no indication.
The final straw came when he did STOP, no warning, in the middle of the road again, oblivious to any one else, looked at his GPS and didn't move. I was so angry that I leaned over my husband and leaned on the horn. But idiot #3 didn't even seen to hear it....
SERIOUSLY? Where do some people get their drivers licence? A weetbix packet?
Is using a GPS more dangerous thank talking on a mobile phone (which is now banned?)
I'm still really really angry. If you need to look at your GPS, indicate and pull over... it's the polite and SAFE thing to do.
Happy driving people!
